Pao de Queijo, a gluten-free bread made of tapioca flour, is a traditional Brazilian recipe originating in the state of Minas Gerais.
Ingredients:
3 1/2 cup of tapioca flour
1 1/4 milk
1 spoon of salt
1/4 cup of oil
2 eggs
1 1/2 cups of cheese
1/2 cup of cassava flour
Instructions:
Heat the milk, salt and oil until boiling. Pour on top of the tapioca flour and mix. Wait 20-30 minutes to cool down . After the mixture is cooled, add eggs, cheese and cassava flour. Grease your hands to form small balls (I scoop a tea spoon size dough, around 3-5 centimetres in diameter.) It is about 50 calories in each roll. You can freeze these balls for months. Pre-heat oven 410 degrees and bake for 15 minutes.
Serve with coffee, tea, wine or your favorite drink at any time of the day.
